Although they changed according to the era, the uniforms were based on naval style designs
Nations from the modern times came to establish military uniforms (uniforms) that unify their armed forces. As the original military uniforms were also formal dress that the military personnel wore, the designs were often formal, yet showy. However, because ordinance, armaments, and tactics increased in sophistication; and it was difficult to perform combat in such attire; it came to be that the uniforms were classified under such things as combat uniforms, normal attire that was worn in peace time, and formal dress that was worm in ceremonies and so on. Also, when the army, navy, and air force came to be established, like in modern and present-day armed forces, uniforms that suited each branch also subdivided the military uniforms even more. Of course, uniforms are also different depending on the country.
Although the Unified Forces are an armed forces that is literally a unification of the nations of the Earth, after the human race planned the advance into space, its equipment—such as vessels and ship-borne planes—was close to those of traditional navies; due to aspects such as being a so-called space army. Whether or not its for that reason, there seems to have been a lot of examples in the Unified Forces' military uniforms (formal dress as well as normal attire) where white was combined with blue colours, which was often used in the navies of various nations.
It doesn't mean that they wore the normal attire or formal dress and fought firsthand. For example, the citizens' image toward the armed forces improves when the uniforms look pleasant, they earn support, and they also occasionally incorporate the era's trends in order to attempt an increase in the number of applicants [to the armed forces]. On the other hand, big changes rarely take place in the functional aspects of the uniforms.
However, when it comes to combat uniforms, the story differs. Although the pilot suit is a "combat uniform" when it comes to a VF pilot, improvements to them progress matching the performance of the VFs—which continue to advance—and occasionally innovative equipment also appears, like the EX-Gear in the VF-25.

Related Matter: The Uniforms Depicted In The Movie
The movie uniforms were newly designed in the movie "Do You Remember Love?", which was released in 2031. They differed from the uniforms that were reported in historical fact, and they had a colour scheme and structure that was special to the movie. In the same way, designs for such things as the VF pilot suits were also prepared for the movie.

In the movie, the ship clothes of Hikaru and others were designed with a blue keynote. With a structure like a jumpsuit, it also served as the regular uniform in the movie.

The uniform that the captain wears was designed with upper and lower halves in deep blue. It had a chic impression in the movie.

⬢ Although They Differed According To The Era, The Designs Also Had Common Features
Although the global Unified Forces, which was formed in 2001, was thereafter reorganized after the conclusion of 2010's First Interstellar War, the Unified Forces' leadership class basically seem to have had traditional normal attire of a navy blue colour jacket + white colour bottoms until the 2050's. Although the design of the details varied, and in addition to the design of such things as a standing-up collar or an open-necked shirt differing according to the era, the inclusion of colour inserts like fringes to the collar and leading edges was a common design in almost all eras.

• The Unified Forces had naval style designs left in their military uniforms. Many of the military uniforms included lines on the sleeves, and these also appear to have been taken over from naval style rank insignia (they are distinct from lapel badges). Also, lines on the sleeves were the rank insignia in the Macross 7 Fleet.

The one worn by Fokker is flying clothes (a flight suit), and when he gets into a VF, even more equipment is worn on it. Robert's coat has an aiguillette affixed to it, and the uniform has a powerful look of protocol.

The uniforms of this era feature a stand-up collar design, irregardless of rank and gender. With Hikaru and Global, the colour scheme in their tops and bottoms appears to be reversed. Global also puts on a wine-red cape over the jacket.

Isamu regularly uses a flight suit. Looking at Millard's normal attire, it appears that Planet Eden is warm. Supreme Commander Higgins's uniform is close to Global's uniform in the "Do You Remember Love?" movie, released in 2031. That seems to have been the trend after the First Interstellar War.

Gamlin's normal attire is close to formal dress, with the epaulettes attached. Such things as Max's cape and cloak, as well as the female operators' extremely short skirt length, are quite dressy. Army civilian employee Chiba appears to be wearing his uniform as a military physician over a regular white [doctor's] uniform.

The pilot wears work clothes-style attire, that emphasize functionality. Jeffery's preferred parts seem to be large for the captain's attire.
Related Matter: The Zentrādi Uniforms
It goes without saying that clothing and accessories are culture. However, even the Zentrādi, who don't have culture, seem to have a custom where there is a certain degree of distinction due to the military uniform (as they don't have a productive capacity, it can also be seen as a custom of merely continuing to wear the clothes that already exist). However, even after the passage of several decades time since the chance meeting with the cultures of Earth's humankind, one can see examples of them wearing approximately the same attire. Some of them may have had an obsession with those uniforms.
